My wife has always been a fan of Indian food but I could not stand the taste of curry. During a recent volunteer event a friend of mine made a curry dish. It was not what I was used to. It used very light curry as opposed to the overpowering curry flavor most attribute to Indian food. I love it and have started building on it. I have always been a fan of Middle Eastern food and Indian food shares many of the same spices.
Today I made one of my classic Alfredo sauces and during it I was thinking I could make a curry based cream sauce. While we were eating my wife mentioned that she believed the cooks at her work screwed up and put the taco flavored chicken in the chicken alfredo, but that it work. After that I decided I need to try my new sauce.
It turned out fantastic! I call it a base because it can be used for so many things, from a soup, to a pasta sauce, to Indian salsa, for anything really. My wife absolutely loved it and she is my Indian food expert. She compared it to traditional Indian dishes, even though I know nothing about Indian food. I gave a little bit to my 3 year old in a bowl and he loved it. He asked me “what is it daddy?” That is a good question, I have no idea…I told him curry soup. He nodded his head and said it was good.
I wanted to share how to make this tasty and versatile base. Here is how I did it…
I started by adding about 2 cups of milk (I have skim) and ½ cup of water to a bowl
I then added my spices (estimates, this is a non-recipe):
2 tbsp. Curry Powder
2 tsp. Garlic Powder
1 tsp Turmeric
1.5 tsp cinnamon
½ tsp Cayenne pepper
1 tsp White Pepper (or ½ tsp of black pepper)
1 tsp Cumin
1 tsp Oregano
1 tsp Cloves
1 tsp Chives (or onion powder)
½ cup of sugar
I also added about 2 tsp of Hidden Valley Ranch dry seasoning (obviously this is optional)
I also added a couple of cubes of beef base in a small amount of water, optional
A pack of Ramen Noodle Chicken flavor (optional, chicken base will also do.)
The last three are optional or to your taste.
I then made a making a roux with one stick of butter and whole wheat flour to the consistency in the link.
Turn on it on high heat and stir constantly as it thickens.
I ended up with an amazing product. It could be used on noodles, I think adding a bunch of rice and chicken would make for a great dish, and my son was eating it plain as a soup. My wife said Indian food has something like this with chick peas and green peas as a type of salsa. Whichever way you choose to use it, it is a great base. I hope you enjoy it!
